Oracle of Ages is more puzzle-based. Oracle of Seasons is more action-based. Which would suit you better?

I am in like Errol Flynn.

Also wondering which to play first. Apparently one is puzzle and the other is combat? I figure I'll go puzzle first, because I think I'd be less likely to burn out if I get the brain-strainers out of the way first and then move on to some good old mindless mass killing.

Same. I've been holding off replaying the original carts for just this moment. It's pretty cool having so many Zelda games available on just one system .

I've never played these before... but I hear from some people that they're not all that good and others (in this thread) that it's great. I'm confused!

Don't be confused. Just ignore the people who claim that they're not good!

They follow a very similar template to Link's Awakening, so if you liked that game, you'll love these.

They're alright, but it's clear when I play them that they're not developed by Nintendo. They feel more like fan-games to me.

And for the record, I'm a huge fan of Link's Awakening, and I like Phantom Hourglass and Minish Cap quite a lot. These two aren't the worst in the series, but they're far from the top of the list.
